proteins en cooking/Don

I've been reading about cooking veggies and all that, and after

reading this thread, I'm happy that at least one of my kids is off to

a good start. Danielle likes raw broccoli. She the thinks that

steamed broccoli " Oh so yucky " in four yr old kids speak! She won't

eat anything on the broccoli - no cheese, nothing just plain raw

broccoli. She's the same way with lettuce. Wish I could get all my

kids to follow suit.

I know that cooking destroys enzymes but for some reason I don't think the proteins. Could you give me some references for cooking en destruction of proteins? Thanks
