Only half an hour ago I poured the lemonjuice into jar, from the jar in which I had 7 organic eggs steeped since Saturday midday. Being my 3rd batch, I think this time I observed a few things that were different from the previous times. First, within an hour of starting this batch the gurgling noises, almost like gnawing noises coming from the jar. made me initially think I had mice somewhere (a possibility here due to time of year). After inspection I discovered it was the 'brew' of lemon juice and the eggs. Had to scoop the foamy stuff off at least 3 times as it was pushing the lid which was loosely on the top. There was at least an inch between level of juice and rim of jar. These noises were a little less but have lasted right through the process. The egg shells now are not thin, only thinnish with lots of crumbly stuff on them (calcium?) but also, quite a few of the eggs have lumpy things on them, as if blown out from the inside with the shell stretched. The eggs are organic and fresh, and so is the lemon juice. I'll be using the egg lemon but just want to know if others have had similar experiences, it's just so odd compared to my earlier attempts.
