He talks a little about drinking fiber before your meal, and it makes the meal get absorbed by your system more slowly, which decreases the spike in blood sugar. Anyway, it doesn't really have anything to do with acids and bases or anything, but it is a very good tip for making any meal a little more healthy. Also, you all have been talking about different types of flours. My husband and I have started using pureed beans instead of flour. Then, you get a lot of beneficial protein and fiber. The beans work just fine without having to add a lot of liquid for brownies and cakes. For things like bread and muffins, you need to add some sort of fiber to it to make it into a dough consistency. If not, you're leaving the enzyme inhibitors and you might as well eat the regular bread.. This diet also includes bacon, meat, cheeses, dairy Decaffeinated coffee or decaffeinated tea with nonfat milk and sugar substitute. If you try some and find a really good one, let me know. I don't know how many of those were really tried, or things people had just come across. I've used the sprouted spelt for pizza dough and muffins. The pizza dough tastes more like bread than what you'd think of as true pizza dough, as that's the recipe it says to use, but it makes fine pizza. The muffins are great though! Another option that I want to find more about is manioc flour. I know about it from a product called "Chebe Bread" that a friend turned me on to. It contains eggs and lots of cheese, though, so I haven't been making it lately. (Although my daughter loves it!) The flour part of it is manioc flour. From the web: "Manioc flour is not a grain, it comes from the tropical cassava root." There is a web page that advocates using it for breading things. I don't know if it can be used to make bread, though. Just wanted to mention it in case any of you wise folk have any more data on it.
