Guest guest Posted December 11, 2003 Report Share Posted December 11, 2003 Pizza with Tomato, Basil & Garlic Servings = 1 individual pizzaServing Size = 1 pizza 1 medium tomato (4 oz) 1 1/2oz. fresh organic mozzarella 8 large fresh basil leaves 4 cloves roasted garlic (or 2 cloves fresh sliced very thin) Slice tomato in half vertically. Remove seeds and slice the meat of the tomato in to julienne strips. Grate the fresh mozzarella Gently slice the basil into strips. Cut each clove of roasted garlic into quarters. Toss the tomato strips, 1/2 the mozzarella, basil leaves and garlic gently in a mixing bowl. Pizza is best baked on a pizza stone but a cookie sheet will work OK. Place the baking stone or cookie sheet in an oven that has been preheated to 500°F. Allow the baking surface to heat -- at least 15 - 20 minutes is best. Arrange all the tomato mixture so that they it be easy to place on top of the dough. Have the grated parmesan within easy reach. Using the pizza dough recipe for each pizza. Gently stretch into 8 inch rounds. Once the dough is formed place it on top of the hot pizza stone and top with each with the tomato mozzarella mixture. Bake for approximately eight minutes and then top with the parmesan cheese. Bake for another 3 - 5 minutes until the cheese has melted.
