Heal Your Depression With Good Foods SunFlower Seed Soup 1 cup Beans, previously soaked overnight and drained at least three times. The longer they soak, the more often the water is changed, the less chance they will cause stomach discomfort. Try Soybeans, Blackbeans, Pinto Beans or Faba Beans. 1 white or sweet potato, cubed 1 onion, halved with skin left on (remove outer skin which contains quercetin, after cooked and cooled) ½ cup Crushed Sunflower Seeds 2 tsp. Crushed Evening Primrose Seeds 2 - 3 fresh leaves Evening Primrose, cut up fine, or 1 tsp. dry 2 - 3 fresh or frozen Spinach leaves, chopped Salt and Pepper to taste. Adding a sweet pepper and chili powder will increase the anti-depressant chemical composition. Add any herb of your preference: Basil, Parsley, Oregano, Chervil, Chives. Optional: 1 can tomatoes, chopped and peeled, with juice ~ gives it a nice, zingy taste! Add water to top up if thick soup is preferred, or if cooking in a pressure cooker. Add more water if you prefer more stock. Simmer for half an hour to an hour or until beans are completely cooked and tender. If using a pressure cooker, let cook for 15 minutes on low heat after 'hissing' starts. This soup is made up of herbs that contain calcium, magnesium, tryptophan, phenylalanine and tyrosine, all helpful as anti-depressants, plus the powerhouse of healers, quercetin (esp. in the Evening Primrose leaves and onion skin).
