Guest guest Posted November 7, 2003 Report Share Posted November 7, 2003 NEW IMPROVED RECIPE FOR SPELT BREAD VIA MACHINE:This is just like white bread....1 1/4 Cups Water1Tablespoon honey1Tablespoon Olive Oil1 Egg3.5 Cups White Spelt Flour1Tablespoon Bread Improver (I use Simply No Knead brand)1 pinch of salt2 teaspoons YeastTurn on machine and let it go.I actually use the dough setting, then remove the dough and mould into all sortsof shapes: pizza base, rolls, etc. I use a 700g bread tin and bake it in theoven... fits in the toaster better. (NB: if you do this you need to let thebread do it's second rise , easy way is to preheat oven on low for half an hour,turn off, then put in dough in tin and allow to rise until doubled (usually 20mins to half an hour) then turn on oven on Medium and bake for half an hour,until it sounds hollow when tapped.********************* This is the original recipe:For white bread:3 1/2 Cups White Spelt Flour1 Cup Water1 Tablespoon Olive Oil1 Tablespoon Honey1 Teaspoon Celtic Salt1 Sachet of Yeast (75g)In my machine I put liquid ingredients first, then flour, then yeast. It takes about 2 hours and 45 minutes to bake.Can make wholemeal bread if prefer - substitute part of the white flour for wholemeal spelt - I have tried 1 cup wholemeal to the rest white.
