I have not tried this yet but intend to convert it for the bread machine.

Bread Machine Tip: Flour changes with the weather, absorbing moisture when the humidity is high in the summer, and becoming drier when the humidity is low in winter months. Simply put, you'll need to use more flour in the summer and less in the winter. When using a bread machine it is always wise to check the dough mixture during its first cycle to be sure that all is as it should be. If the dough appears too dry, add 1 to 2 tablespoons of liquid until the ingredients are nicely incorporated. The same goes for just the opposite, if the dough appears too wet, a tablespoon or two of flour added corrects the situation.

 

Banana Bread (No Milk Or Wheat)

1/4 Cup Nuts

1 1/2 Cup Very ripe bananas, Mashed

 

1 3/4 Cup Sifted amaranth flour or

1/4 Cup Oil

 

-sifted brown rice flour

1/4 Cup Honey

 

1/2 Cup Arrowroot

2 Eggs

 

2 Tsp Baking soda

2 Tbl Lemon juice

 

1/2 Cup nuts, Chopped

1 Tsp Pure vanilla extract

Mon, 25 Mar 1996 10:52:36 -0500 Wendy Lockman Process the 1/4 c nuts in a blender until finely ground. Mix the nuts with the flour, arrowroot and baking soda in a large bowl. Stir in the chopped nuts. In a separate bowl, mix together the bananas, oil, honey, eggs, lemon juice and vanilla. Then pour the liquid mixture into the flour bowl and mix with a few swift strokes. Do not overmix. Pour into a greased 9x5' loaf pan or 2 7x3' pans. Bake large loaf at 350 F for 55 to 60 min, or small loaves for 45 min or until a cake tester inserted in the middle comes out clean. Let stand in the pan for 10 min, then turn the loaf out onto a wire rack to cool. Servings: Makes 1 loaf.
