Guest guest Posted October 14, 2003 Report Share Posted October 14, 2003 Dear Melissa, Well, my theory is that commercial eggs are so low in quality, that they HAVE to refrigerate them just to give them some semblance of a shelf life. Organic eggs on the other hand are so rich that their natural enzymes and the quality and integrity of the shell keeps them well preserved. When Valorie and I had our chickens (all varieties), we would sometimes have eggs sitting on the counter for up to three months and they never went "bad". Never! We never refrigerated our eggs. Refrigeration will lower the enzyme content (I don't know, maybe by half???). I've noticed that when you refrigerate organic eggs, you'll fart more. Not a lot, but enough to notice or make that much of a difference. I think this has to do with the lowered enzyme content and this does make sense. I've also heard that once you refrigerate eggs, you should then keep them that way, but I'm not sure how true this is. Has anyone else had any experience with unrefrigerating eggs (organic) that came refrigerated, but then let them sit on the counter to warm up to room temperature??? What are the health benefits of storing in the refrigerator as opposed to room temperature? The only information I could find on my internet search related to proccessed eggs, not organic (does it make a difference in storage?) and none addressed the issue of why to store them a certain way. I was just hoping that someone here might have an idea or be able to point me in a dirrection. I've also been following the discussion on sweeteners. My so and I had a discussion on this the other day and I was wondering if someone could clarify it for me. He feels that raw sugar would be best because your body is able to metabolize it and therefore anything else is artificial (in the sense that it is not usable by your body) and not something we should be using. I feel that although sugar is necessary for some recipes that I would prefer to use Stevia in my drinks and other things I may at sugar to to sweeten. He feels that the only reason to cut out sugar would be in an effort to loose weight. Any opinions or clarifications on this would be greatly appreciated. Thanks so much! I just love this list. Eating too much sugar does make you gain weight because it burns off very slow in our bodies. Sugar is a carb. It increases your appetite and causes your insulin levels to spike. We lived in a backwoods cabin after getting poisoned by a chemical spill... long story there.. but while we lived in that cabin -4 years- we had none of the 'necessary' amenities, such as utilities or appliances like fridge. We got our eggs from a friend that grew the chickens. When we could, we'd get several dozen at a time and store them at room temperature (they stored them in the fridge before we got them). Now mind you that's in a backwoods cabin in North Idaho, not Arizona. But we had no trouble at all with storing eggs. We even did that with storebought eggs... we survived.. We did a lot of things in that cabin that 'ya just can't do and survive', tho. Someday i'll tell ya bout it..lol.... That does help, and I think it goes with my thinking that even store bought Organic eggs that come refrigerated can be then stored at room temperature with no damage. Refrigeration of "Organic" eggs is just the result of our brainwashed upbringing I think. Any other stories out there to either prove or disprove this??????? That meant storing these eggs and the rest of our food for months at a time.. (we were snowed in for 8 months out of the year). We probably kept the eggs 3-5 months at a time- or more. The storebought eggs weren't even organic! BUT! i would recommend that people only do this with ORGANIC eggs... they're LOTS healthier for ya. He said eggs from a coop were "dirty" and that is why they refrigerated them - to keep the germ levels down. Now this is really simple thinking, but I think generally right too. He showed me the yolks when I was a little girl of a fresh egg and a store bought egg and you can see the difference in just the color.
