I've never seen a list... CV is not a good choice on roots and hard or tough parts of a plant... If you are using those parts and don't want alcohol... you could try mincing or chopping of the parts of the plant to help the acv... it may or may not work..

Dear Annie,

You can use ACV on any soft plants or the softer parts of plants such as leaves and flowers, and it will work fine.

Cayenne is a soft plant and could be used exclusively with ACV. This choice would be yours. You might want to use powdered cayenne or dried herbs with this approach so there is none of your mixture getting any mold on it which can happen if there is too much water content in whatever it is your tincturing. Cayenne peppers would probably fall into this category so you may want to dry them out with a dehydrator first.

Is there a rule of thumb for which herbs to use when making a tincture using apple cider vinegar. I know that the best is always alcohol but I am a recovering alcoholic and do not like having alcohol in the house or to mess with it. Overall I have chossen to use tea, capsules, to take internally.
