It's a little more complicated than that but here are

a couple links to help break it down and explain it:

 

The Glycemic Index breaks down carbs into categories.

The higher the index the more simple the carbs. Simple

carbs do not require the body to work to assimiliate.

The more the body has to work to assimiliate the

better the carb. Simple sugars have a right spin, just

like our cells do. When a carb with a right spin

enters the body it is immediately absorbed and the

result is an immediate sugar rush( massive amounts of

insulin are released). Complex carbs have a left spin

and therefare are not immediatly absorbed. This

creates a slower absorbtion, so it's a more steady

flow into the blood. When you have a slow absorption,

there are not the massive amounts of insulin pumped

into the blood stream and our blood sugars stay more

in balance.
