Herbs in Cooking

I need to correspond with someone who is savy about herbs. I need them for

health reasons as I've heard they can benefit the immune and digestive systems.

 

I would like to cook with herbs and I don't know which herbs are the best for

immune and digest systems. Also, how can I get a good soil test at a

reasonable cost to try growing organic herbs. I'd like to get good top soil

that

isn't full of toxins. is there a way?
