They’re a backyard favorite here in California, and there’s nothing like the taste of one ripened to perfection. In recent years they’ve become trendy due to the rising popularity of Mexican and vegetarian foods and their availability in supermarkets. But lately, I’ve been impressed with the growing volume of research that supports what I’ve known all along: Avocados are nutritional powerhouses. Did you know avocados contain 60% more potassium than bananas? A medium-sized one packs about 850 mg! They are also rich in the phytochemical beta-sitosterol which promotes normal cholesterol levels and a healthy prostate. Ounce for ounce, avocados are a superior source for many nutrients including glutathione, a potent antioxidant, and my favorite eye health protector lutein.
