A good quality virgin coconut oil. Nothing better or better for you.

Valorie usually uses Safflower Oil or Sunflower Oil for frying though we do very little of that (mostly fish when we eat that).

 

Olive Oil is best kept and best used unheated.

I started with coconut oil for frying for my family. I don't eat fried food, but my family loves coconut oil. And it is much better then olive oil for frying. You don't have smell of burning oil, or black staff on the bottom of the pen. It is better if you use lower temperature and fry longer. My son loves potato fries with coconut oil. There is no grease feeling when you eat.
