I just bought a starter 'shroom on Ebay, and had my first batch of tea yesterday. It was fantastic! Now the questions: Does the starter 'shroom utilize all the sugar? Or is there still sugar in the tea? Is it safe for diabetics to consume? What about the caffeine that was in the green tea? Does the 'schroom consume it also, or is it still in the Kombucha tea? Since this is a product of fermentation, how much alcohol is in the finished product? And last, if you leave the tea ferment too long, it turns into vinegar. (Havn't gotten to this stage yet) I assume the vinegar would still have the same healthful properties as the tea. Is it useful, say on a salad, or in place of apple cider vinegar, or to make herbal vinegars?
