Water will dilute the hydrochloric acid in your stomach and slow down the digestive process. As for the second part of your question, I really don't think there has been much documentation on how one herb interacts with another let alone any research. I could be wrong but I haven't run across any, as yet. I suppose if one were to pour through the tons of tomes and voluminous volumes of written material from the past ...oh say...since they started documenting herbal remedies and compiled all that knowledge into a concise book..... But if you drink one herb mix for, lets say high blood pressure, and take peppermint tea during the day separately, it will decrease usefulness of the other tea. this is what I red, I am trying to dig that article.
