yes you can use the peel

the peel contains naringin, a major component that is said to reduce the key enzymes responsible for carbohydrate absorption. It also reduces the activity of the enzymes responsible for cholesterol synthesis.

studies have also found is that it takes the whole grapefruit - peel and all to lose weight and maximize the health benefits. . And yes grapefruit is a good source of vitamin c and fiber..... not sure about the rind on this though.

Fern,

I used to put them in capsules. and take 1 every day... now, I just take a slim teaspoon full and put it in my juice... sometimes with my total nutrition and juice.. it is sweet so you could even put it in water... .... If I'm feeling a bit "ill" I take more with my total tonic... take a couple dropperfuls and then chase it with some "peel"...
