(eg: Carrot pulp - Carrot cake, Apple Pulp - Apple Tea cake Vegetable _ Strews and Soups) these are just some ideas. Mayby also flavour and colour rice and pasta as you cook it to change the colour one night and suprise the family (or Scare them with Plum coloured pasta). Hope this helps.
