You should be able to make pasta with any grain. Hard red winter wheat is the common recipe. On a large cutting surface, place some flour (about 2 cups). Take your hand and make the mountain of flour a volcanoe :-) Crack 2 large eggs into the hollow center. Take a fork and whisk the eggs a little at a time into the flour from the inside out. When you have mixed them together, you should have an elastic dough. Shape and cut as desired. Fresh pasta only needs cooked 2-3 min. in salted boiling water.
