Dragon's Nest Salad

 

1 head of green cabbage, shredded

1 lg. carrot, shredded

1 sm. white onion, finely chopped

1/2 cup rice or almond milk

1/2 cup ACV

6 Tbl. unrefined sugar

1 tsp. cumin

Small handful ( about 3 Tbl.) fresh cilantro, finely chopped

Sprouted nuts or seeds

 

Toss veggies and cilantro in large bowl. Whisk together remaining ingredients and pour over cabbage mixture. Toss till evenly coated, cover and refrigerate 3 hours to let tastes blend. Sprinkle your favorite sprouted nuts and/or seeds on top at serving time (I like pine nuts).

Alright Janet!!!! Is there anything we can substitute for the sugar????

Looks yummy though... can't wait to try it.

Yes, un-refined sugar. Much better for you than refined sugar. Still has all the minerals in it. By the way it is very, very dark brown usually. Also called molasses sugar, Muscavado sugar and various other names. Quite good too.

Sure Suz, I have been experimenting with a strong infusion of stevia. I think maple wood be too overpowering and give it a nasty color. I think honey would be great though.
