Pretty much the same as pasturization does to milk and juices. Better off eating it raw. Sorry. Sometimes you can find places that will sell only half of a pineapple. Whenever, we have a surplus of anything, we do one of two things: in the case of Fruit, I puree it, pour into plastic sip back and then freeze. I use these for smoothies, or in the case of pineapple sometimes for marinade or homemade BBQ sauce. Also pineapple can be dehydrated. as long as you use a low temerature, you can preserve many of the enzymes. We do this with salad herbs alot too, whenever we have a surplus (or a great buy) we use what we can in the first couple of days after purchasing, then dehyrdate the rest for use later.
