A few years ago I was diagnosed with sub-clinical gluten intolerance which is a more mild form of celiac disease. At the time about 65% of my intesinal lining was ruined which I've since rebuilt. What sprouting does is release the enzyme inhibitors in the grains. These enzyme inhibitors stop your body from producing its own natural digestive enzymes or utilizing those in the food you eat. I find that now I am able to eat sprouted grains in limited amounts without any ill effects. However, I am cautious with how much I'll eat. I know that a somewhat prevalent opinion on this list and in many areas of natural healing is that things like gluten intolerance don't actually exist... I mean their symptoms certainly do but their cause isn't exactly what we think. I don't have enough information either way to develop a clear opinion on that at this point. However, my suggestion, based on what you've said, would be to be very very careful with intaking anything with gluten until you've rebuilt your intestinal lining. From my experience, cutting out gluten and sugar was a necessity to begin rebuilding my body.
