If I were in your position, I would eviscerate two out of every three of the rabbits I fed my dogs. Given that rabbits are among the creatures that dogs would normally kill and eat, an intact carcass would probably be fine once or twice a week. My experience, though, is that giving dogs organs, especially liver and kidney, more than once or twice a week causes diarrhea, although that's probably something that varies with the individual dog and may change as tolerance for the richness of organ meats grows.
