It's alot cheaper than brown sugar if you can get it, from Indian grocery stores. But you can use any sweetener of your choice in Chai, like honey or stevia. I have one friend that I make unsweetened tea for, but I have to admit that I don't care for it too much made this way. You can reduce the subjective need for alot of sweetening by not using too MUCH tea when you make the Chai. Also, you can try making it with Tetley tea. I find that has a much milder flavor than Lipton or Indian powdered tea: much less astringent. The kind of tea isn't as important as is cooking the spices, tea, sweetener,and milk together. Chai is so rich and savory, something of a tea-based cappucino. After I tried it I found tea made " English-style " hopelessly bland and tasteless.
