And it actually looked like bread LOL Never made bread in my life, so the whole process was amazing to me :-) Didn't like it very much though - it was very heavy to eat and digest, made with only buckwheat grains-flour. I understand that usually wheat breads mix 50% wheat flour and bread flour in order to make the bread lighter. As we've adopted Doc's suggestion of using only sprouted grains/seeds/nuts/beans in our diet, this means I need to find a good grain/seed with which to make my own bread flour, so that I can make a lighter bread. Can someone advise which would be a good grain/seed etc., to use for this? My usual organic supplier stocks: bulgar wheat, polenta, quinoa, cous cous, millet, barley, brown semolina, buckwheat, unroasted buckwheat. Or is rice maybe good for this? Guest guest Posted February 5, 2003 Report Share Posted February 5, 2003 Unless you are completely off wheat, it may help to wean yourself and to help adjust by starting with 1/2 whole wheat and 1/2 other flours and gradually decrease the whole wheat.
