So here is what we have used as we are also on the run cooks. All but the Zone Diet are meatless, eggless and dairy-free. Zone Diet Cookbook has all natural recipes and I have actully used some of them in the microwave. These recipes are usually for 1-2 servings...but some of them make so much food that they will actually feed 3-4! Sinfully Vegan, 140 Decadent Desserts to satisfy every vegan's sweet tooth. By Lois Dieterly. Fix-It-Fast Vegetarian Cookbook by Heather Houck Reseck, R.D. (My stepmother-in-law sent me this one) The Healthy Hedonist, by Myra Kornfeld. She also wrote " The Voluptuous Vegan " Both are Meatless, Eggless and Dairy-free cookbooks. If you want to get really structured and definitely, no doubts about being vegan look for this really old cookbook...(another my stepmother-in-law sent me) Something Better Nutiriton Seminar: Country Life, Vegetarian Restaurant & Natural Foods. BY Ellen G. White. Lastly: Taste and See Allergy Relief Cooking by Penny King. This is another oldie my stepmother-in-law sent me. Now I've mentioned my Stepmother-in-law quite a bit. She is totally nuts and berries Vegan! I've been able to pick her brain for recipes that are quite tasty. I am slowly learning what things I can substitute for the bad food stuffs in recipes.
