Celiac, gluten intolerant

Hi! My name is Nic and I am a celiac. My sister is gluten intolerant

as well as myself. I was looking around and found this group and I

was hoping to find others that are the same way! and also how to deal

with it.. It's muc nicer to not have stomach aches though, I tell you

that much!

i'm 33 and just realized i am celiac. the clarity in my mind, my

energy, and body has shifted 180 degrees. it's worth the big changes!

no more belly aches. they were horrible growing up and i'm pretty

certain my grandmother died of cancer stemming from celiac without

knowing she had it. knowledge and action is so vital!

HI, Nic - welcome to the list. My son and daughter are gluten

intolerant (more like allergic to it, as they both have immediate

reactions to it - my daughter, who's 10, gets a stomach ache, and my

son, who's 14, gets rashes; when he was small we thought he might

have had celiac, but I can't remember what tests were done that

showed he wasn't). They're pretty good about not eating any gluten

(oh, and my daughter is also allergic to soy, so we don't really eat

much in the way of processed foods; between gluten and soy, they're

in just about everything processed!). I strongly suspect I am also

gluten intolerant, but I have a lifetime of habits to change, and

it's been harder for me to do it. My son was diagnosed at age 4, has

always been an adventurous eater, and easily took to a change in

diet. In fact, he prefers my home baked non-gluten stuff to just

about anything. I made a delicious breakfast yesterday, for example

- rice flour, fine ground corn meal, our fresh raw goat's milk and

duck eggs, a pinch of salt, and aluminium-free baking powder (my all-

purpose " mix " ), added a little cinnamon, sucanat, cloves, nutmeg;

sliced apples layered over the top. Poured the batter into a

preheated cast iron pan with a little bit of home made butter in it,

and bake till golden on top. I like to make a special hot breakfast

for the family on weekends.
