I know exactly what you're saying. I guess this is the main

reason we're all here.

First of all I'd like to start out by saying that everyone has

their own pre-conceived ideas about fats. Fats is a topic that in

my opinion is not well understood. There is a lot of confusion even

in the medical profession regarding this subject. Initially it was a

source of confusion to me as well.

My decisions grew from a desire to glean information geared to

actual life experience, rather than advice or hearsay. This was not

hard to find although it did require some searching.

 

As I searched I became very intrigued with epidemological studies.

(world populations) It amazed me to find that as Americans, we have

the worst dietary choices in the whole world with the disease and

disability to prove it!

My research led me to the study of good fats and their effects on

our health. I discovered that the vast majority of our ill health is

really due to an imbalance of fats in our diet.

 

Ethnic studies point to the fact that even those who eat more

saturated fats have more of a chance of surviving when they include

a few good fats in their diet. Then while going through Udo Erasmus'

site I realized why this was true.

Saturated fats, although they do provide us with certain nutrients

necessary for health, cannot provide us with the essential fatty

acids we need to heal. Our bodies can make extra saturated fats if

need be, however they cannot make essential fatty acids at all. They

must be provided in our diet.

When considering overall caloric value, saturated fats just do not

figure into the equation as essential. We get some saturated fats in

nuts, seeds, beans and other plant foods although these types of

saturated fats as a rule do contain enzymes and EFAs and for this

reason do not contribute to obesity or ill health. Although... Even

nuts for example can prove harmful if we ingest the varieties that

include more caustic refined oils.

 

We must steer clear of anything that does not contribute to our

health and well being if we would opt to live a long and healthy

life.

It does us little good to count calories. We must consider the

source of the calories and ask, how is this food or nutrient going

to impact my overall health.

Is this going to add to my existing problems or is this going to

improve my health? If the calories we are adding to our diet do not

provide `good fats' and nutrients then they will only be added

baggage for us to carry around. AND it's the added baggage that

proves to be detrimental to health.

 

This is the hot topic of discussion around the world today. Even the

WHO is getting in on it, which is really ludicrous actually. Since

when were dietary choices supposed to be taxed and legislated? Do we

really need the fat tax? Seems as if what we really need is an extra

measure of common sense.

P.S. Percentages are somewhat vague examples of what we really need

don't you think? Although the ADA swears by them, percentages never

really worked for me. If you ask me your friend died from a over

abundance of additives, preservatives, pesticides and growth

hormones (present in all the animal foods today) and a lack of

essential fatty acids in vegetables, fruits, seeds and nuts.

Many additives are linked to cancer and our modern foods are full of

them!! We are lucky if we're able to avoid them really even when

trying to eat organic.
