Diet and Disease in the Media

What they say: Low rates of cancer and heart disease in Japan are due to a low

fat diet and high consumption of soy products. In the countries on the

Mediterranean, it's their high consumption of olive oil, grains, and vegetables,

and lower consumption of saturated fat. In France they have a level of saturated

fat similar to what we have, so it must be their red wine that protects them.

What they don't say:

We rarely, if ever, hear that sugar consumption is much lower in countries other

that the United States and the United Kingdom.

It's lower in France, and even lower in the countries on the Mediterranian and

in Asia.

Koreans have a diet similar to the Japanese and have a similar low rate of

cancer and heart disease, but they don't eat a lot of soy foods.

In each of these three areas there is little or no consumption of trans fatty

acids from hydrogenated oils, junk or processed foods such as breakfast cereals

with additives, preservatives, and artificial colors.
