But there is a paradox. One of the surest ways to bring on gallstones is to lose weight rapidly. Those who are heaviest and lose the most pounds quickest are at a highest risk. Furthermore, says Dr. C. Wayne Callaway of George Washington University, dieters often have gallstones but never experience symptoms until they get off a drastic weight-loss diet and then try to eat normally. But you may be able to overcome some of the hazards by including at least five to ten grams of good fats in one meal each day, according to Steven Heymsfield, M.D., of the Obesity Research Center at St. Luke's- Roosevelt Hospital in New York. For example: You can add a couple of tablespoons of Extra Virgin Olive Oil each day. This fat is necessary to stimulate the gallbladder to empty bile completely at least once a day, retarding gallstones. When you drastically cut fat intake, the gallbladder does not contract as often to expel bile into the intestine, says Dr. Heymsfield. Thus, bile builds up and can trigger formation of gallstones. Many experts think it is unsafe to lose more than one half to one pound a week. Fat misunderstandings-- Will eating less fat save you from gallstones? Eating too much fat can make you fat, and therefore more vulnerable to gallstones. And overindulging in saturated animal fat and cholesterol may aid the formation of gallstones. Greek researchers recently documented that people who ate lots of animal fat, such as fatty meats and butter, were more apt to develop gallstones. Interestingly, they found that a high consumption of Extra Virgin Olive Oil actually discouraged 'formation' of gallstones. In testing, fifteen subjects on four separate days ate either a breakfast with less than fifteen grams of fat, more than thirty grams of fat or no fat at all. Using ultrasound, the researchers measured the gallbladder contractions every fifteen minutes for an hour. Surprisingly, contractions occurred as often after a fat-free meal as after a high-fat one.The Georgetown investigators contended that a low-fat diet specifically to fend off gallbladder attacks is generally not warranted, although a low-fat diet is good for health in general. What to eat to prevent gallstones: Eat lots of vegetables, especially legumes, lentils and beans. Eliminate refined sugars and fried foods. Do not fast for long periods and be sure to eat breakfast. Lose excess weight slowly. Quick weight loss can bring on gallstones. Eat some avocadoes and olive oil every day.
