Ground turmeric will make bright yellow eggs, a infusion of rose hips will make a pretty brownish egg, and bronze fennel will make a light yellowish colored egg. There is a little more work involved in using herbs to make your dyes, but it's a fun change of pace. Add 3-4 cups of water to a medium pan, with 4 teaspoons vinegar. Add 2 tsp. of the spices or about 1/2 cup of fresh herb. Boil this mixture for about 15-20 minutes. You can be boiling your eggs while the dye is boiling in another pan or they can be boiled ahead of time and kept in the refrigerator earlier in the day. Once the dye has boiled--cool it some and place it in a bowl--you can strain out the herbs or leave them in-add the eggs you wish to dye to the dye in the bowl so they are covered. Soak them for 1/2 hour or overnight in the refrigerator. Do this with each herb or spice you wish to use. HERB CENTERPIECE For a pretty centerpiece place a pot of tulips or other spring flowers in the middle of a wicker basket and place cut herbs all around the pot to cover and edge over the sides slightly. The fresh green of the herbs will be a lovely contrast to the spring flowers. HERB RECIPES Baked Brie with Fresh Herbs Ingredients: 1/4 cup sun dried tomatoes, chopped 1/2 cup fresh basil leaves 2 tablespoons grated parmesan cheese 2 tablespoons toasted pecans or walnuts 1 tablespoon olive oil 1 clove garlic, peeled 1/8 teaspoon freshly ground pepper salt to taste 16 ounces Brie cheese In bowl of food processor combine tomato, basil, cheese, nuts, oil, garlic and pepper. Process to form a fine paste. Season with salt. Scrape into a bowl, cover and refrigerate until ready. Bring to room temperature. Trim the white crust from the Brie and cover the top of the cheese with the herb mixture. Place Brie on a baking sheet and bake at 375 degrees F oven for about 5 minutes until the cheese is beginning to melt. Transfer to serving plate and surround with crackers. Serve immediately.
