Lemon Ginger Tea

This is wonderful for an upset stomach, plus ginger is a great anti-inflammatory.

2 C. water

1" piece of ginger, grated*

Juice of 1/2 lemon

Sweetener of choice (brown sugar is delicious)

Place water, ginger, and lemon juice (I also add the squeezed out lemon - bitter , but I like that). Bring to a simmer and cook about 5 minutes. Stir in sweetener and serve hot. This is spicy but very delicious.

* I always keep my ginger in the freezer. I grate it on the small side of a potato grater and NEVER peel it, even for Oriental recipes. I've done this for years and it works fine!
