Guest guest Posted November 11, 2005 Report Share Posted November 11, 2005 Pumpkin Pecan Pie Squares1 Cup all purpose flour1/2 C old-fasioned or instant oats1/2 C packed brown sugar1/2 C butter or margarine, softened3/4 C granulated sugar1 can(15oz)LIBBY'S 100% pure pumpkin1 can (12 oz)CARNATION Evaporated Milk2 large eggs2 1/4 tsp pumpkin pie spice1/2 C chopped pecans 1/4 C packed brown sugarWhipped creamPreheat Oven to 350* Combine: flour, oats, brown sugar and butter into small bowl. Beat at low speed until crumbly. Press on bottom of ungreased 13 x 9" baking pan. BAKE 15 minutes. Combine:granulated sugar, pumpkin, milk,eggs, and pie spice in large mixer bowl. Beat at medium speed 1 to 2 minutes, pour over crust. Bake: 20 minutes. Combine: pecans and brown sugar in a in small bowl. Sprinkle pecan topping over filling.
