Guest guest Posted November 11, 2005 Report Share Posted November 11, 2005 A F T E R N O O N T E A R E C I P E S - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - Herb and Onion Tea Sandwiches 1/3 cup regular or light mayonnaise 4 tbsp. minced herbs-parsley, marjoram, basil, chives, etc. fresh lemon juice to taste salt and freshly ground pepper to taste 12 very thin slices of white bread with a homemade texture 1 sweet onion, sliced very thinly In a small bowl stir together the mayonnaise, the herbs, the lemon juice, and salt and pepper to taste. Spread one side of the bread slices with the mixture, then arrange the onion slices evenly on half the bread slices. Top them with the remaining bread slices. Press the sandwiches together gently, trim the crusts, and cut into fourths. Makes 24 tea sandwiches. Cinnamon Nut Tea Sandwich Spread Ingredients: 1/2 cup lowfat cottage cheese 4 tbsp. raisins; 4 tbsp. cashews; chopped fine 1 tsp. cinnamon; Combine the mixture and use on cinnamon bread for a nice tea sandwich. You can also use a sweet white bread like Portuguese bread. Lentil Sandwich Spread Ingredients: 1 cup cooked lentils, any type 4 clove garlic; pressed 1 tsp. ground coriander 1 tsp. ground cumin 1/2 tsp. ground turmeric 1/2 tsp. chili powder 1/2 tsp. ground ginger Combine all of the ingredients in a small pan. Cook on low to simmer for 5 minutes. Remove into a container and chill for at least one hour.For this sandwich, try spreading it on flat bread and sprinkling very lightly with minced parsley. Dill and Beef Sandwich Ingredients: 6 tablespoon light cream cheese, softened 1/4 tsp. garlic powder 1 tsp. fresh, minced dill leaves salt and pepper to taste 6 slices good, firm bread 6 slices deli roast beef 6 very thin slices tomato 6 pieces of lettuce Combine cream cheese, dill, garlic powder,salt and pepper. Spread evenly between all the slices of the bread. Top 3 of the pieces of bread with the beef, tomato, sprouts and a piece of lettuce. Top with the other bread slice and cut into quarters. Chickpea Spread for Pita Bread Ingredients: 1 cup cooked chickpeas or garbanzo beans garlic powder to taste 3 tbsp. bottled Caesar dressing, any brand Salt and ground black pepper to taste Optional: a dash or two of cayenne pepper Mash the chickpeas with a fork and add the seasonings. Serve on crusty white or whole wheat bread with lettuce and tomato slices. Or buy mini pitas and carefully place in the spread and toppings after cutting in half.
