Crunching Carrots to Curb Cancer

 

Carrots give you lots of beta carotene, one of the antioxidant carotenoids known to protect against heart disease and cancer. But another component of carrots may turn out to be even better at cancer prevention - and a good reason to eat lots of them. Researchers in England recently found that falcarinol, a natural pesticide in carrots that protects the plants from fungal diseases, reduced cancer incidence when tested in rats. In a study of rats with precancerous tumors, the research team looked at the effects of adding carrots or isolated falcarinol to the animal’s usual food. The animals who ate the carrots or foods with falcarinol were one-third less likely to develop cancer than rats which didn’t get either. Will this work in humans? The researchers couldn’t say for sure but noted that epidemiological studies show that people with the highest carrot consumption can lower their cancer risk by 40 percent compared to those who eat few or no carrots. And they suggested that other vegetables, not yet tested, may contain equally effective anti-cancer compounds. The study was published in the February 2005 issue of the Journal of Agricultural and Food Chemistry.
