Guest guest Posted April 18, 2002 Report Share Posted April 18, 2002 Heat it very gently. All good natural honey will crystallize below a certain temperature, it is a natural process. The honey's that you get that remain runny have all been overheated, with the exception of Acacia honey, (and maybe a couple of others that I don't know about) Stand it in a bowl of hot water, or on a radiator. Don't put it in the microwave! One good thing is this. If it has crystallized on you then it has not been overheated and still contains all the wonderful things that make is such a good healer. Overheated honey remains liquid - most of the supermarket honeys are like this, and is really just, well, liquid sweetener! It's not spoiled, and IMHO it tastes even better crystallized! I have a quart and a half that have crystallized and I'm thrilled about it! I have it in a pancake syrup bottle so my darling husband wouldn't make quite as much of a mess with it as he does with a lid and jar. Because being a man, he pours it out the side, sticks the lid back on and leaves the honey running down the side. :-( And then puts in back in the cabinet. So you see my reasons.
