Whole Wheat Banana Muffins

 

Ingredients (use vegan versions):

 

2 1/2 small bananas, very ripe

1 1/3 cup whole wheat pastry flour

3/4 cup turbinado sugar

1 tablespoon baking powder

1/4 teaspoon salt

2 tablespoons olive oil

3/4 cup oats

1/2 cup walnuts, chopped

1/3 cup water

1/2 teaspoon vanilla extract

1/4 teaspoon almond extract

1/2 teaspoon nutmeg

Directions:

Preheat oven to 350 F.

 

Thoroughly mash bananas in a small bowl. Mix in olive oil, vanilla,

almond, extract, and water. In a separate bowl, combine flour, vegan

sugar, baking powder, salt, and nutmeg. Add the banana mixture to the

flour mixture, stirring well. Stir in walnuts and oats and spoon

mixture into oiled muffin tins.

 

Bake at 350 F for 20-30 minutes, or until lightly browned.

 

Delicious warmed and topped with Earth Balance or jam.

 

Serves: 8-10

 

Preparation time: 30-45 min.
