Guest guest Posted July 14, 2004 Report Share Posted July 14, 2004 Raspberry Wine 24c.-50 c. raspberries 1 bag 5lb sugar 1-2 gal. water 3-4 campden tablets * can also add rhubarb to this OR for every 2c. of fruit use 1c. sugar I use a big canning pot to make this. Put raspberries, bag of sugar and warm water. Stir till sugar is dissolved. Cover. Stir 2 times a day. In 3-5 days mixture will start to foam; add crushed camden tablets in a little warm water and put in pot. All this time, stir everyday. Wait a day or two and put mixture in cheesecloth bag and squeeze out the juice. Fill a gal. jug 3/4 filled and put a airlock on jug. When there is no more bubbles coming from the airlock; it is ready to start to siphon it. I do this a couple of times at least for a couple of months. Put a regular cap on jug and wait 6 months or more before drinking it. To sweeten the wine-- I will do it 2 ways your choice. Pour wine in a glass and add sweet and low (this dissolves instantly). Add as much as you like to your liken. Or make a sugar syrup. Water and sugar and heat till sugar is dissolve. Add to your glass of wine or put in the jug. This is all to your taste.
