Guest guest Posted June 9, 2004 Report Share Posted June 9, 2004 Broccoli Casserole 2 pkg. frozen chopped broccoli 1 cup grated cheddar cheese 1 can cream of mushroom soup 1 medium onion, chopped or 1 1/2 T. dry onion flakes 2 eggs, well beaten 1 cup fresh buttered cracker crumbs (or 1 sleeve Ritz crackers, crushed) Cook broccoli according to pkg. directions and drain. Add soup and mayonnaise and mix well. Add eggs and onion. Pour into greased 1 1/2 to 2 quart casserole. Sprinkle with cheese and top with 1 cup broken cracker pieces. Bake at 350 for 30 minutes.
