Guest guest Posted May 31, 2004 Report Share Posted May 31, 2004 Ginger Healing Soup1 1/2 cucumber, skin, seed and chop1 bunch spinach leaves, rinsed and torn in half1 cup water1/2 cup mashed avocado1 tablespoon ginger, peeled and minced2 1/2 tablespoons lemon juice2 teaspoons soy sauce1/8 teaspoon cayenne powder1 cup zucchini , finely grated1 cup corn kernelsPut the first 3 ingredients into a food processor and chop. Blend in the avocado and the spices. Puree until smooth. Place into a medium size bowl. Stir in corn and zucchini and season to taste. Chill until ready to serve. Serve cold.
