Herb Butters Blanch a large handful each of watercress, parsley and chervil for 30 seconds in boiling water and then blend or pound them with one chopped shallot, a clove of garlic and a pinch of sald. Beat or blend the mixture into 8 ox (225 gm) of butter. (It's so easy - even I can do it!) Of course you can change the herbs to suit your own taste. Have a great day!
