Dear Marjon and Gottfried,

Namaste.

Thank you for your email.

Medical Background:

Smell and taste belong to our chemical sensing system.

The complicated processes of smelling and tasting

begin when the substances around us stimulate the

special cells in the nose, mouth, or throat. These

special sensory cells transmit messages through nerves

to the brain where specific smells or tastes are

identified.

Olfactory (or smell) cells are stimulated by the odors

around us, such as the fragrance from a gardenia or

the smell of bread baking. These nerve cells are found

in a small patch of tissue high inside the nose.

Gustatory (or taste) cells react to food and

beverages. The taste cells are clustered in the taste

buds of the mouth and throat. Many of the small bumps

that can be seen on the tongue contain taste buds.

The common chemical sense contributes to our senses of

smell and taste. In this system, nerve endings on the

moist surfaces of the eyes, nose, and mouth, and

throat cause sensations like the sting of ammonia or

the burn of pepper.

Because the flavor of food is so dependant on smell,

people complaining of taste problems often really have

a smell problem.

Testing may demonstrate a reduced ability to detect

odors (hyposmia) or to taste substances (hypogeusia).

Some people can detect no odors (ansomia) or no tastes

(ageusia). In other disorders of the chemical senses,

the system may distort an odor or taste (for example,

making a normally pleasant smelling substance smell

foul).

Some people are born with chemosensory disorders, but

most develop them after an injury or illness. Upper

respiratory infections are blamed for some

chemosensory losses as are nasal polyps, sinus

infections, or exposure to certain chemicals. Many

patients who receive radiation therapy for cancers of

the head and neck or who have injuries to the head can

also develop smell or taste problems.

on the nerves inside the nose, the nerves on the

tongue and nerves inside the throat.
