You are welcome Tracy. I think that we all try to limit the grains since they are so destructive to our systems but we still have our sweet tooth... LOL

Thanks Barbara....I am going to have to make these soon.

This looks really good! I've made almond flour bread before, but I never thought about muffins. Thanks!

Wow! Really.... send some over ;)

And I still did not. I still do not have almond flower but one of these days, in a near future I will....for sure! I'm getting tired of my home made ice cream so the new thing will be great :)

I didn't sprout my own almonds, I just used Bob's Red Mill because I had it on hand. The muffins taste like a nice banana muffin. Almond meal products can be dry, so the banana adds a lot of nice moisture to them. I'd send some over but Kail would be mad, lol. ;-)

Is it possible to get tired of ice cream? LOL! Can you remind me of your recipe?

In my reply to you I really meant flour not flower....LOL...I guess I was sending too many flower pictures lately thus the mistake....

I also will be using a ready made almond flour, I'm just not up to sprouting or soaking almonds...

Tell Kail that he is selfish....he hoard everything good for himself...how about sharing? ;)

I eat ice cream every day so I guess it is possible to get tired of it :)

Here is my best recipe:

2 cups raw cream

1 cup raw milk

2 whole eggs (I'm getting pastured eggs)

2 Tbs instant coffee only (if you want coffee ice cream)

2 Tbs raw, unsweetened cacao powder (for mocha flavor)

1 to 1/2 Tbs arrowroot

1 tsp real vanilla

You can use 1/2 cup of real maple syrup instead of coffee and/or cacao for also a delicious maple ice cream.....sky is the limit of flavors with this basic recipe. Hope you will enjoy it :)

Darn it! I knew I was forgetting something....

1/2 tsp slightly rounded powdered stevia!

You have to have some sweetener in your ice cream! LOL

But no sweetener if you are using maple syrup. It is sweet enough.

You can also use one Tbs vanilla and all kinds of fruits or berries. My favorite is lemon ice cream.

Do you heat anything up, or just put it all in the ice cream maker? Thanks for the recipe!

Do you use lemon zest or lemon juice in the ice cream? It sounds sooooo good!

Heat anything? No, everything should be icy cold.

What I do, I put all ingredients in a bowl and mix them together. Then pour it into a bucket from the freezer. After half hour of churning, the ice cream is ready for the freezer. Easy.

I'm still experimenting with the lemon flavor. I use half a cup of freshly squeezed lemons but no zest. Or I can use a lemon extract and just a little lemon juice for more delicate flavor. But lemon ice cream is really refreshing... :)
