I have been trying to read the articles and pay attention more to what we are buying and eating so we can get healthier, but I'm still inteh beginning stages since its a bit overwhelming. I was pretty impressed by the article recently about the 7 foods that should never cross one's lips, but have a question about avoiding Canned Tomatoes - I usually buy jarred sauce or make my own, but when I make my own I use Puree and Paste - does that come in jars? are there alternatives? Guest guest Posted January 15, 2010 Report Share Posted January 15, 2010 Hi Terri! I know tomato paste does come in a plastic squeeze tube. I've never gotten it but I've seen Rachel Ray use it. I've also seen tomatoes sold in cardboard containers similar to pint sized milk cartons. I've never seen puree in a jar that I am aware of. But I would check at more upscale places like Whole Foods or Nugget, something where they sell more gourmet type products. When I make my own sauce, what I do is roast the tomatoes in the oven until they are soft and brown. Then I run them thru my tomato strainer and freeze the pulp. I also dehydrated a lot of tomatoes last year, and I grind up the dried tomatoes into powder and store it in the freezer. When I want to make sauce, I take out a carton of frozen pulp and thicken it (if it needs it, or if I want it really thick like for pizza sauce) with the tomato powder. The tomato powder works great. I haven't bought any canned tomato products in a long time. I know that sounds like a lot of work, since you work full time, but you dont have to do it all at once. Even if you just get a dehydrator and dry your tomatoes, you can still make a decent sauce out of dried and ground tomatoes. OR, if you roasted your tomatoes and ran them thru the tomato strainer, you could thicken with the tomato paste in a tube. You can't believe how great the roasted tomato sauce tastes. I usually throw in garlic to roast in it too. Fabulous. I also dehydrate halved tiny heirloom Italian tomatoes and store them in the freezer. I throw a handful in my sauce or soup or potroast or stew and they are fabulous. I soaked some in wine and sprinkled them with salt and herbs too for really fancy ones. YUM. Canned salmon-I keep some on hand, but the only thing I've ever made with it is salmon burgers. I usually wait until I have some fresh basil growing to make them, because that tastes great with the salmon. I don't really measure anything, but I think I saw a recipe for salmon burgers on the can. I saw a recipe recently for a salmon loaf, but I haven't tried it yet. Wait, I think I made some fish tacos out the them too-those were sure good. I imagine you could also make salmon salad, similar to tuna salad. I think a salmon frittata sounds great too.
