I'm not worried about the texture because they'll be blended into smoothies. I do the same with the kale & chard but am more concerned about the cucumbers because someone had mentioned you cannot freeze fruits/veggies with a " high water " content. Also, is it safe to just rinse off my turnip greens from the garden, stick them in freezer bags in the freezer, defrost later and cook them? I don't believe there is but wanted to double check! When I get home tonight i will quote you the exact information. I freeze my collards, kale, and chard all the time. I dont even deforst them, I throw them in the pot frozen. They all hold up well. But they can be frozen for soups and casseroles where a crisp texture is not important. To prepare them for freezing, peel, core, and remove the seeds. Cut into chunks, grate or puree.
