Sweet Savvy #247 - Celery Salad with Walnuts, Dates and Cheese

 

 

 

 

15 May 2009 Greetings!

We tend to think of enjoying sweets as desserts, but here is a healthy sweet salad that contains lots of refreshing celery. It's delicious! I made this salad and put it on top of a bowl of tossed leafy greens. Yum! My husband loved it too. The cheese is optional. If you do want to add it, try shreads of parmesan or romano, or bits of mild feta or goat cheese. You can adjust the proporations of each ingredient to suit your taste. With salad, anything goes. CELERY SALAD WITH WALNUTS, DATES AND CHEESE makes 4 generous servings 1 cup walnuts

1/2 shallot, minced

1 tablespoon sherry vinegar (or apple cider vinegar)

2 tablespoons olive oil

salt and freshly ground pepper

1 bunch celery (about 1 pound), thinly sliced across the stalk

1/2 cup dried Medjool dates, quartered lengthwise

2 ounces cheese

 

 

Preheat the oven to 350 degrees F. Spread the walnuts on a baking sheet and toaste for about 8 minutes. They're done when they release their fragrance. Let the nuts cool completely, then coarsely shop.

In a large bowl, combine the shallot, vinegar, oil, and salt and papper.

Add the walnuts, celery, dates, and cheese, and toss.

Serve immediately.
