Last weekend I make a cake for a party and it was so good that I thought I would share it with you. My inspiration was all the summer berries that are in the market here in Florida now, and a classic French berry tart, with a layer of pastry cream and a crust lined with chocolate. This is definitely an "occasional" treat, not an "everyday" cake. First I made one recipe of my Fabulous All-Organic Special Occasion Cake in a "half sheet" pan (meaasures 12" x 17" x 1"). You can also make it in other pan sizes or cupcakes. This time I tried using agave as the sweetener, and it worked great. Follow the instructions on the recipe for honey, but substitute agave. 0A Then I made a layer of chocolate frosting. I didn't measure when I made it, but it's very simple. I started with 1/4 cup softened butter in my electric stand mixer and added cocoa powder, organic powdered sugar and cream until I had the right sweetness to the chocolate and a soft spreading consistency. It was just the right amount for a thin layer on top of the cake. I put the cake in the refrigerator so the frosting would set a bit. Next I whipped 1 cup of mascarpone cheese in the mixer until it was fluffy. Then I added slowly 1 cup of cream and continued to whip until it was all thick and combined. I added a couple of teaspoons of organic powdered sugar and a splash of vanilla. This is so delicious! The addition of the mascarpone makes turns the whipped cream into more of a frosting. I removed the cake from the refrigerator and spread this mixture on top. Finally, I added berries on top. Because it was for a party, I cut the cake into 24 squares and then decorated each square with half of a large strawberry, a raspberry, and a blackberry. It was very sweet to see these little berry bundles lined up on the cake. Everyone oooh'd and ahhh'd and loved eating every bite!
