Recipe for smoked bacon without nitrates?

Does anyone have a recipe for how to smoke bacon without nitrates?

Our local University Co-op is willing do try this for me, I just have

to come up with the recipe. They tell me the bacon turns gray without

nitrates. Does anyone have suggestions?

I checked my book Stocking Up, and it said this:

 

"(Nitrate free bacon) doesn't depend on saltpeter for good keeping; it must be kept frozen. Unfortunately, nitrate free bacon is not something you can duplicate at home because "quick freezing" is crucial and you can't quick freeze in a home freezer; it just doesn't get cold enough quickly enough. To ensure there will be no spoilage, all possible air must be kept away from the meat, something best done by shrink-wrapping with commercial equipment."

 

I don't know anything about smoking or making bacon, but i did find some simple recipes with a quick google search. There are a lot of nitrate-free bacons available commercially, so it's entirely possible to make them-they are probably more pale than regular bacon, but I don't remember seeing any gray ones sold.
