Our local University Co-op is willing do try this for me, I just have to come up with the recipe. They tell me the bacon turns gray without nitrates. Does anyone have suggestions? Guest guest Posted February 5, 2009 Report Share Posted February 5, 2009 I checked my book Stocking Up, and it said this: "(Nitrate free bacon) doesn't depend on saltpeter for good keeping; it must be kept frozen. Unfortunately, nitrate free bacon is not something you can duplicate at home because "quick freezing" is crucial and you can't quick freeze in a home freezer; it just doesn't get cold enough quickly enough. To ensure there will be no spoilage, all possible air must be kept away from the meat, something best done by shrink-wrapping with commercial equipment." I don't know anything about smoking or making bacon, but i did find some simple recipes with a quick google search. There are a lot of nitrate-free bacons available commercially, so it's entirely possible to make them-they are probably more pale than regular bacon, but I don't remember seeing any gray ones sold.
