Stainless Steel & Citric Acid

Might want to research how citric acid reacts with your stainless items. I did some preliminary research the other day and wasn't quite sure of what to make of it...would love to hear what others can decipher from the internet.Lee Anne

What do you think about substituting vinegar for the citric acid? I

found this conversion chart on a web forum about swapping out lemon

juice in a jam recipe.

 

4 Tablespoons vinegar=

2 Tablespoons bottled lemon juice=

1/2 teaspoon citric acid

I might try this edited version first before the citric acid so the

stainless steal doesn't oxidize. Does anyone else think this

substitution would work?
