I found this conversion chart on a web forum about swapping out lemon juice in a jam recipe. 4 Tablespoons vinegar= 2 Tablespoons bottled lemon juice= 1/2 teaspoon citric acid (http://forums.gardenweb.com/forums/load/harvest/msg0813590224352.html) I might try this edited version first before the citric acid so the stainless steal doesn't oxidize.
