10 October 2008 Greetings! Earlier this year I gave you a wonderful recipe for Sweet Ricotta Cheese. I've been making it weekly for the past month or so. It's so easy I know how to make it by heart now, and really, it doesn't take more than 10 or 15 minutes. Last week I made it in the morning, before I had breakfast. Usually I wait until it cools to taste it, but that morning, I was hungry, so I tasted it hot, right out of the pan. Oh goodness! It was so delicious! I put some little wild organic blueberries on top and it was heaven! So now I'm making my ricotta in the morning, so I can have my first serving hot with blueberries. I found ricotta is also delicious cold with blueberries, but that hot ricotta for breakfast is a real treat.
