Greetings!

 

 

Back in the days when I used to eat refined white sugar, one of my favorite foods was red pepper jam. I haven't had it in a while. But then I saw Jamie Oliver make kind of a jam with red peppers in a skillet on his television show "Jamie At Home." This is my version.

 

It's a condiment. Eat a little at a time.

 

ROASTED RED PEPPER "JAM"

 

makes about 2 cups

 

4 large red bell peppers

olive oil to brush on peppers

2 tablespoons olive oil

2 medium onions

2 cloves garlic

1/2 cup balsamic vinegar

1/2 cup evaporated cane juice (Sucanat or Rapadura)

salt

pepper

 

Preheat the oven to 425 degrees F.

Cut the peppers in half and remove the seeds and stem. Place them cut-side down on a baking sheet. Brush tops of peppers with olive oil. Place in oven and roast until the skins turn black, about 20 minutes. Remove peppers from the oven and allow to cool a bit. Then remove blackened skins and discard. Set peeled peppers aside.

While peppers are roasted, peel and chop onions. Place olive oil in a hot skillet and add chopped onions. Turn heat down and cook the onions low and slow, stirring about every minute or so. Cook them until they are very brown and wilted, about 20 minutes. The longer you cook them, the sweeter they will be. After the onions have cooked about 10 minutes, finely grate or chop the garlic, and add it to the onions.

Place pepper/onion mixture in a food processor and pulse until they are chopped but still chunky. Or pile them on a cutting board and chop with a knife.

Return the mixture to the skillet, and add the remaining ingredients.

Bring to a boil, then simmer for about 20 minutes, until the mixture is reduced and sticky.
